Stuffed avocado with Fish Free Tuna
Serves 4 (starter or lunch)

1 pack Fish-Free Tuna
2 ripe avocados
lemon juice
1 red onion, diced finely
1 apple, diced
1 tbs capers
pitless black olives, sliced
handful chopped chives; save a few sprigs for garnish
2 tbs (vegan) mayonnaise
salt and pepper

Combine apple cubes, red onion, olives and chives with the mayonnaise and add the capers. Stir in the Fish Free Tuna and season to taste with lemon juice, salt and pepper.
Halve the avocados and remove the pit. Carefully remove some of the avocado flesh to enlarge the well left by the pit and rub the avocado halves with lemon juice to prevent browning. Cube the removed flesh and add to the salad. Stuff the avocados freely with the Fish Free Tuna salad and garnish with chive sprigs.
