For 12 small sandwiches
2 boxes of The Vegetarian Butcher mc2 Burgers
1 red onion
3 pineapple slices
12 mini burger buns
Some spinach leaves
Sliders are small sandwiches that are fun to serve as an appetizer or as party food. This recipe is for three different sliders all based on our delicious mc2 Burgers, one with pineapple and spinach, one with taco chips, avocado and tomato, and a third with grilled vegetables.
Cut the aubergine and courgette into slices and slice the red onion into rings. Brush the vegetables with a little olive oil and grill. Season the vegetables with salt and pepper.
Chop the pineapple into pieces. Remove the stone and the skin from the avocado and cut into slices. Cut the tomato into equally sized slices.
Slice the buns into two and coat both halves with a little oil. Grill briefly. Cut the mc2 Burgers into 3 equal pieces and fry them briefly until golden brown.
Put a little mayonnaise and ketchup on the bottom halves of the sliced buns and build up the different sliders.
For the pineapple and spinach sliders;
Add some spinach leaves, pineapple and a piece of the Burger. Cover with the top half of the bun and secure with a skewer.
For the taco chip and avocado sliders;
Cover the base with a slice of tomato. Add a piece of the Burger, a slice of avocado and a tortilla chip. Finish off with the top of the bun and secure with a skewer.
For the grilled vegetable sliders;
Cover the bottom halves with mixed salad, add some grilled vegetables and a piece of the Burger. Add the top half of the bun and secure with a skewer.
The toppings described here are only a start, you can use your imagination to make up all kinds of varieties. The possibilities are endless. Have fun and enjoy!
