Pizza Lollipops with vegan Mince
Makes 30 lollies


150 ml lukewarm water
15 g fresh yeast
1 tsp castor sugar
250 g all-purpose flour
½ tsp salt
2-3 tbs olive oil

2 packs vegan Mince
1 onion, diced
1 clove garlic, crushed
1 can of tomatoes
handful of fresh chopped Italian herbs
2 tbs olive oil
1 bag grated cheese (vegan)
salt and pepper

30 lollypop sticks

Pour 50 ml of the water into a bowl, add the yeast and sugar and stir well. Mix flour and salt in a big bowl, make a small well in the middle and pour the yeast mixture in it. Add the oil and the remainder of the water. Work the flour and liquid into a dough that forms a ball. Sprinkle flour on the work surface and work the pizza dough with one hand until you have a short roll. Turn it 45 degrees and fold it once. Repeat until the dough is supple and elastic (about 10 min). Form a ball and leave to rise under a tea towel on a warm spot for one hour. Sprinkle flour on the work surface once more and roll the dough out in a rectangle the size of your baking tray.

Sweat the onion and garlic in olive oil, but don’t let them brown. Add tomatoes and herbs and bring the sauce to a soft boil. Cover the pan and leave to simmer for about 20 min. Puree the sauce with a hand blender of in a food processor and season again if needed. In the meantime, fry the vegan Mince in a little oil in a skillet until nicely browned, season to taste and reserve.

Preheat oven to 200C / 390F. Cover the pizza dough with sauce and sprinkle with the Mince and the (vegan) cheese. Roll up the dough lengthwise. Cut into 1cm thick slices and place on a tray lined with baking paper. Bake slices for about 15 min. Skewer the slices on the lollipop sticks when they’re cool enough to handle.
