Pinxtos with fig tapenade and Bacon Bits
Preparation time: 10 minutes
Makes 10 pinxtos

½ a box of Vegetarian Bacon Bits
10 ciabatta slices (1/3 of an inch thick)
5 dried figs
5 sprigs of basil
2 tblspns of olive oil
salt & pepper
oil to fry in
10 red berries or blackberries
10 tapas sticks

Spread the ciabatta slices with some oil and griddle until browned. Leave to cool before further use.
Fry the Bacon Bits in 2 table spoons of oil until browned and crispy. Leave to cool and chop the cubes into small pieces. Chop the dried figs and basil leaves. Stir through the olive oil and season to taste with salt and pepper.

Divide the tapenade over the ciabatta slices and sprinkle some Bacon Bits on top. Add a berry or a blackberry and secure with a tapas stick. Serve!
