Jacket sweet potato with Smoked Bacon Strips
For 4 persons.

Preparation time: 45 minutes

1 pack of Smoked Bacon Strips
4 sweet potatoes
400 grams of chickpeas
1 red onion, cut
15 grams of parsley, chopped
2 tl ground cumin
50 grams of pumpkin seeds
Juice and zest of ½ lime
200 grams of fat
Garden cress
pepper and salt
Oil to bake

Heat the oven to 200 degrees. Clean the sweet potatoes and wrap them in aluminum foil. Bake the potatoes into the preheated oven for about 45 minutes. Roast the pumpkin seeds in a dry frying pan. Fry the Smoked Bacon Strips in 2 tablespoons of oil until they are brown and crispy.

Fry the onion and add the chickpeas, cumin and parsley. Fry for 2 minutes. Add the lime rasp and juice and stir. Season with salt and pepper to taste.

Make sure the potatoes are cooked by checking with fork. Remove the potatoes from the oven and slit them half lengthways. Add the chickpeas-mixture on top. Sprinkle with the fried Smoked Bacon Strips and add some feta-crumbs on top. Garnish with the pumpkin seeds and cress.
