Filo Cups with spicy Fish Free King Prawns
Makes 12 cups.

1 pack Fish Free King Prawns
3 sheets filo dough
4 tbs olive oil
½ tsp chili powder
juice of 1 lime
coriander leaves
1 bag watercress  
125 ml (vegan) sour cream
salt and pepper

Preheat oven to 180C / 355F. Quarter the filo sheets, brush with olive oil and place in a muffin tin to form a cup. Bake for 5-7 min. until nicely browned and crispy. Allow to cool in the tin. Combine Fish Free King Prawns, chili powder, lime juice, olive oil, pepper and salt.
Fry the Fish Free King Prawns in 2 tbs of oil on medium heat until they start to change colour. Place a small amount of watercress in each cup, and spoon a dollop of sour cream on top. Add the Fish-Free King Prawns and season with salt and pepper to taste.
