Sloppy Joe with Vegan Mince
4 servings

1 box of The Vegetarian Butcher Mince
3 tablespoons olive oil
1 large onion, finely chopped
1 clove garlic, finely chopped
½ red chilli, finely chopped
1 green pepper, diced
2 tsp (smoked) paprika
1 tbsp ketchup
1 tbsp Worcestershire sauce (vegan)
1 tbsp soy sauce
1 tin diced tomatoes (400ml)
salt and pepper
1 tbsp (Red wine) vinegar
1 tbsp olive oil
Iceberg and romaine lettuce
4 (soft) buns

Heat the oil in a large pan on medium heat. Add the onion, garlic and chilli and fry gently for about 5 minutes. Add the green pepper and once that’s cooking add the paprika, ketchup, Worcestershire sauce and soy sauce and stir. Then add the tomatoes and the Mince and leave to simmer for about 20 minutes on low heat with a lid on.

Finish the sauce with a little olive oil and vinegar and if necessary, season with salt and pepper.
Put some lettuce on the base of the buns and then distribute the sauce evenly and top with the top part of the buns.
Now all you have to do is eat it without making a mess. Enjoy!
