Sausage Rolls with Little Willies
For 12 rolls

2 boxes Little Willies
250 gr flour
6 gr of salt
70 gr butter
10 gr caster sugar
1 sachet dried yeast (7 g)
125 ml of milk
1 free-range egg

For the mango chutney:
1 mango, diced
1 onion, chopped
1 clove garlic, finely chopped
3 tbsp olive oil
1 red chili pepper, diced
2 cm ginger, grated
1 clove
100 ml of rice syrup
1 tbsp lemon juice

Put the flour and salt into a bowl and make a hole in the middle. Heat the milk until lukewarm, stir in the yeast until dissolved and pour into the pit. Add the butter and sugar and knead the dough until smooth. This takes at least 5 minutes. Divide the dough into 12 equal pieces, make small balls and let rest covered with plastic wrap for 10 minutes. Bake the Little Willies until golden brown and set aside. Roll the balls of dough into an oval and lay the Little Willie in the middle. Now fold in the sides and brush the edge of dough (on the longer side) with egg. Close the roll. Place the rolls on a baking sheet with waxed paper. Let them now rest again for 45 minutes. Brush the buns with egg and bake them in about 20 minutes in a preheated oven at 200 ° C.

Put all the chutney-ingredients in a saucepan and let simmer on low heat until the mango falls apart and the mixture gets a jam-thickness. Optionally, add some water.
