1 pack The Vegetarian Butcher Chicken Chunks
½ apple, sliced thinly
2 tbsp (vegan) mayonnaise
1 tsp curry powder
1 tbsp chopped chives
salt and pepper
oil for frying
Brown the Chicken Chunks in 1 tablespoon of oil. Leave to cool, then pull apart with two forks into smaller pieces. Combine mayonnaise, curry powder, chives and lemon juice to taste. Add apple and Chicken Chunks, and season with salt and pepper.
Serve on crackers or a roll on a bed of lettuce.
