Radicchio Salad with Bacon Bits
Serves 4.

1 box of Vegetarian Bacon Bits
4 radicchio (or chicory)
75 gr of lettuce
2 red grapefruits
60 gr of walnuts
3 tbsp extra virgin olive oil
1 tbsp balsamic vinegar
1/2 tsp palm sugar blossoms
1 tsp mustard
pepper and salt
oil for frying

Fry the Vegetarian Bacon Bits in 2 tablespoons oil on high heat until the Bits are crisp. Wash the lettuce (if necessary) and let it dry. Take the leaves off of the radicchio and remove the core.

Toast the walnuts in a dry frying pan and chop them coarsely. Cut and peel the grapefruits. Save one  tablespoon grapefruit juice. Add the balsamic vinegar and mustard to the grapefruit juice and stir the palm blossom sugar until it is resolved. Add the oil drop by drop and add to taste a little salt and pepper.

Arrange the lettuce, radicchio and grapefruit slices on 4 plates. Drizzle some dressing over the salad and spread the walnuts and Vegetarian Bacon on top.
