1 box of The Vegetarian Butcher Smoked Bacon Bits
3 tbsp oil (for frying)
1 tbsp Agave nectar
1 small watermelon, chopped into 2 cm cubes
250 g Strawberries, hulled and halved
250 g Tomatoes, halved
½ Cucumber, halved, deseeded and thinly sliced
150 g Tofu (or feta cheese), chopped into small cubes
½ bunch Mint, just the leaves
2 Spring onion, in rings
Olive oil (we used avocado oil)
4 tbsp (Red wine) vinegar
salt and pepper
Heat the oil in a frying pan and fry the Smoked Bacon Bits on high heat until crispy. Take the pan off the heat and mix the agave nectar in with the Bacon Bits.
Next, mix all ingredients in a bowl and bring season the salad with mint leaves, lots of black pepper and a pinch of salt, vinegar and a good splash of olive oil. To finish the salad, add the Bacon Bits.
