Moussaka with Mince

Moussaka with Mince
Preparation time: 30 minutes

2 boxes of Mince
500 gr of solid potatoes
30 ml of olive oil
30 gr flour
300 ml soy milk
1 onion, chopped
2 cloves garlic, chopped
2 cans diced tomatoes
3 eggplants
3 sprigs rosemary, chopped
oil for frying
pepper and salt

Preheat the oven to 180 degrees. Peel the potatoes and cut into slices of 1 cm. Boil the potatoes for about 10 minutes until al dente. Cut the eggplant into slices 1 cm thick, sprinkle with salt. Fry the onion and garlic in 2 tablespoons oil. Add the Mince and fry. Add the tomatoes and rosemary to the Mince-mixture and season with salt and pepper to taste.

Heat the oil and stir in the flour. Fry the flour over low heat until tender (about 5 minutes). Make the sauce by adding the soy milk to the flour. Add salt, pepper and a pinch of nutmeg to taste. Grill the eggplant on both sides for 1 minute.

Grease a baking dish by using a little oil and spread half of potato slices on the bottom. Cover it with half of the tomato sauce and half of the eggplant. Repeat and cover with the sauce on top of the moussaka. Bake the moussaka for 30 minutes in the (preheated) oven at 180 degrees.
