Traditional Mash with Mince
Serves 4.


For the mash:
2 boxes Mince
1kg potatoes, cut into equal pieces
0.5 kg of sour apples, peeled and cut into equal parts
0.5 kg of sweet apples, peeled and cut into equal parts
2 large onions, chopped
oil for frying
1 tablespoon ras el hanout
Pepper and salt

For the gratin:
100 grams of cashew nuts
3 tbsp nutritional yeast
1 tsp salt
1 clove garlic

For the gratin: mix al the ingredients in the food processor. Don’t mix too finely!

Preheat the oven to 200 °C. Keep a half onion separately for the Mince. Put the potatoes, apples and onion in a large pan, add water until they’re fully covered. Boil until tender and drain. Keep a glass of cooking water. Mash the apple and potato-mix and add if it is too dry a little water. Season with nutmeg, salt and pepper.

Fry the onion and add the Mince. Add the ras el hanout and stir a little. Make layers of the mash and the Mince in a dish, finish with the gratin on top. Put it in the oven for 20 minutes until golden brown.
