No Beef Wellington
Serves 4.

2 boxes mc2 Burger
1 shallot
1 clove garlic
1 box chestnut mushrooms
1 package fresh puff pastry
3 sprigs thyme
1 bunch fresh parsley, chopped
1 tablespoon balsamic vinegar
1 free-range egg
salt and pepper
oil for frying

Preheat the oven to 200 degrees. Chop the mushrooms, shallot and garlic in the food processor. Heat 2 tablespoons oil in a frying pan and fry the mushroom mixture with thyme until all the liquid has evaporated. Season with the balsamic vinegar, salt and pepper and add in the chopped parsley. Place the pastry on a floured cutting board and cut 8 circles (14 cm).

Put the mc2 Burgers on a pastry-circle. Add the mushrooms and cover this with another pastry-circle. Add a little water on the edges of the pastry, press the two pieces of pastry together. Fold the edges inward and press gently with a fork. Brush with a beaten egg. Put the No Beef Wellington for about 15 minutes in the oven. Nice to serve with roasted vegetables.
