MC2 Burger with onion relish and hummus

MC2 Burger with onion relish and hummus
4 servings:

4 mc2 Burgers
4 hamburger buns
a bag of mixed lettuce
1 tomato

For the hummus:
225 gram chickpeas
2 tablespoons tahini
2 cloves garlic
juice of 1 lemon
4 tablespoons olive oil
salt and pepper

For the relish:
3 onions (half rings)
1 tablespoon brown sugar
1 roasted red pepper
olive oil
harissa (a spicy red sauce that is often used in Arab cuisine) to taste

First put all the hummus-ingredients in the food processor. Turn on the food processor and keep mixing  until an smooth mixture. If the hummus is a bit thick, add a little olive oil to the mixture.

For the relish, fry the onions very slowly in a little olive oil. Let the onions caramelise on low heat for about 20 minutes so they turn light brown. Then add the sliced grilled pepper, the sugar and season with harissa. Let it fry for a minute. When the relish is too dry, you can add a little water.

Slice the tomatoes into nice thick slices. Cut the burger buns in half and toast under the grill until golden / brown. Bake the (thawed) burgers about 3 to 4 minutes in a frying pan with a little oil until brown.

Spread each half of the bun with hummus, put some lettuce on the bottom bun, and then a tomato. Add the burger and top with a large spoonful of relish. Now place the top half of the bun. Fries made of sweet potatoes are a delicious side dish!
