Semur is an Indonesian translation for the Dutch word “smoor”, which means to braise or stew.
2 boxes of The Vegetarian Butcher Chicken Chunks
4 tbsp (rapeseed) oil
2 large onions, finely chopped
1 clove fresh garlic finely, chopped
1 x red chilli, sliced into rings
½ tsp coriander
½ tsp nutmeg
1 tsp finely chopped ginger
150 ml water
1 tsp vegetarian stock powder
1 diced tomato
4 tbsp sweet soy sauce
1 tbsp tamarind paste
Heat 3 tablespoons of oil in a frying pan and on a low heat, gently fry the onion, garlic and chilli for about 10 minutes. Add the spices and fry for a minute or so before adding the Chicken Chunks and frying for a couple more minutes.
Next, add the water, stock powder, soy sauce, tomato and tamarind paste and stir. Bring to the boil, season with salt and pepper if necessary and leave to simmer on low heat for about 20 minutes with a lid on.
Serve with rice and an organic sambal!
